Why is it that my beer always tastes best when the barrel is nearly empty. I have not had enough time to get a good amount in reserve. Since discovering star San I have started to bottle again so that should help. I am in the armed forces and currently working away so don't want to spent a weekend brewing. Most of my beers peak at 8 weeks but I am too impatient!

Just have to make twice as much! do a double brew day, then you'll be "ahead" from there on in :D

Mate is nearly impossible when your brewing beer this good it doesn't last long especially when all your family suddenly despises they like bitter aswel haha. Keep brewing.
