Beer taste peaking when barrel nearly empty.
Why is it that my beer always tastes best when the barrel is nearly empty. I have not had enough time to get a good amount in reserve. Since discovering star San I have started to bottle again so that should help. I am in the armed forces and currently working away so don't want to spent a weekend brewing. Most of my beers peak at 8 weeks but I am too impatient!

Just have to make twice as much! do a double brew day, then you'll be "ahead" from there on in

Mate is nearly impossible when your brewing beer this good it doesn't last long especially when all your family suddenly despises they like bitter aswel haha. Keep brewing.
