Torrified wheat, what to do with it?
Torrified wheat, what to do with it?
A friend of mine gave me half a sack of torrified wheat a few months ago and its been sitting in my grain storage since.
It seems to be very popular amongst British brewers.
What do use it for, which flavours can I expect and what quantities do I use?

I'd be tempted to try it in a Wit or Weiss at about 30% of grain bill. The rest Pilsner/Lager malt and wheat malt. Probably 30% lager malt.

I use it in every brew for head retention .....

AFAIK Torrefied wheat is just used to improve head retention, and also AFAIK adds no flavour of its own.
In the north of England we like a 'head' on our beer; allegedly darn sarf they don't, they want more beer & less head in the glass - so I'd expect northern england brewers to use it and southerners not to - but we're not quite a nation of stereotypes, not yet anyway.
now where's me flat cap, the whippet needs a walk

Have it with milk for breakfast.

It seems to be used in some Yorkshire bitter styles, e.g. Black Sheep and some Scottish and a few other brews.
Best wishes
