Started a mash today. When grain mixed in was bang on target at 66.
Trouble is my digital thermometer then slowly started to rise. Either its faulty, or the enzymatic activity is causing a rise. Or something!!!.
I was reluctant to chuck cold in,so most of the mash was closer to67.8
Luckily I don't mind a fuller body.

Sounds like a dodgy thermometer to me. Did you thoroughly mix before taking a reading?

Everything is fine.
Your thermometer is working perfectly.
The hydration of the dry starches in the malt is exothermic, it creates heat and a degree or so of temperature rise is to be expected.
This will be greatest in the centre of the mash.

Which makes sense as that is where I deliberately put probe. Does it not affect enzyme activity then.? Should I drop strike temperature a littlebto compensate? Cheers for responses
