Hi All,
Gonna order some more grain today and want to try something different to my normal grain.
I had a bottle of ROK IPA from Lidl's the other night and it was a lovely nutty sort of flavour, will Carapils give me that flavour and at what quantity?
Also what hop(s) would you recommend?

Carapils will give you added mouth-feel and head retention without added flavour so it isn't what you are looking for. You are going to have to go with a darker roast, take a look at this :

I like carapils, doesn't add colour or the rounded cloyingness of crystal malt. If you push up towards 300g you should get a toffees/caramel note, at lower levels it gives some body and mouthfeel and perhaps enhances the maltiness but in a cultured not overt way.
You say nutty though. I made a good APA with 20g carapils and 1kg vienna - but I wouldn't say that was nutty, I've used aromatic malt in a blonde and that was quite good, you could give that a try, mine came out very APA

I often use 100-200g of carapils as above for head retention and body. I think you want a lightly roasted malt like biscuit or amber malt, but use with caution. Less is more with these malts. 200-300g in a 5 gallon pale ale is plenty. Munich malt is similar but sort of sweeter and you can be a bit bolder with it - 10% of the grist is good in an APA and adds a bready, nutty malt character. Try a combination of munich and biscuit or munich and amber, but go easy on the amber. It can taste acrid if you add too much and it takes months to mellow out.

I've spent about the last 40 minutes looking through my recipes in Beer Alchemy trying to decide what I want to make so I know what to order.
I came up with this :-
Guinness - probably the best beer I make, to me it's just like the original bottled Guinness, (from GW's book, BYOBRA), I have friends asking for this, they can wait!
My own recipe IPA- made with Bramling Cross - awesome!! First recipe I developed myself, couldn't believe how good it was, made it twice since with different hops, not so good so it's back to the original recipe.
My own recipe Oatmeal Stout - love the look of the recipe, developed over a year ago, never made, gonna do it!
My version of Jail Ale - I've made 4 in a row now, for me it's the beer I'll drink for ever more. Just don't want anything else!!
I think I've covered the beers I like to drink there, (all hale the Jail!!), then there's the TC's, Bug Eye, (named after my dog, Wayne, who has horizontally opposed eyes) 8.1% and Pinto's Cranberry & Raspberry TC, 6.1%.

For nutty flavour from actual barley malt, it's hard to beat floor malted Maris Otter, plus a little bit of toasted malt such as Victory, Biscuit, or Aromatic. You could use any base malt though and add some actual crushed nuts to the mash. I've tasted Pecans, Black Walnuts, Chestnuts done this way, all delicious.
