Hello All,
Hoping that I have got this question in the right category now! I am new to your forum and have been brewing some really tasty hoppy pale ales, but they lack the malty depth that I am looking for - so does anyone have any good recipes for a really good malty pale ale with plenty of hoppy flavours or malty ales that can withstand a good bashing of hops please? I have been using 4kg maris otter 900g wheat and 500g carapils with a whopping mix of around 300g of new world hops 50g of these have been added at start and the majority seeped at 80 degrees

You could add some Munich for some maltiness but you might still be banging your head against a brick unless you consider your yeast choice and water treatment.

I have had my water analyzed and treat my water according to the type of beer I am brewing and usually use safale 04 yeast but will give munich a try - thanks

You could mash a couple of degrees higher, add plenty of light crystal and yes munich or vienna malt will give more maltyness. I would also recommend using a more estery yeast such as Windsor rather than S04 or Notty/Girvin.
For a really malty ale you need to step into the darker ales - plenty of amber malt in a porter or brown ale gives superb complex roasted malt flavours. You could add some to a pale ale but only a little as it will darken it considerably.
Edit - Belgian aromatic malt also gives a big boost to maltyness but the armomatic notes may not fit with the British style too well.

+1 for Munich and a change of yeast, perhaps cultivate some from a bottled beer similar to the style you are try to reproduce.

As others have said mash a little higher around 68-69C. Brew a bit stronger as well 5.5-6%. With additions of munich, crystal and cara will improve the malt profile. Try using Nottingham yeast. Do you really want it too malty if you going for a hop bash like that anyway?
