Black Treacle/Black Strap Molasses

Post by englishchrissy » Mon Jan 27, 2014 11:28 pm

Hi, my next brew is going to be an attempt at re-creating Three Tuns Brewery's Old Scrooge (aka Steam Punk). I know it has Black Treacle/Black Strap Molasses in it but how much and when to add it? I'm going to brew 50L so if anyone has experience of using this stuff I'd love to hear your views. I'd hate to tip that much down the drain! Thanks in advance!

Ive used a whole tin(454g i think) of tate and liles black treacle in 25 litres of stout it is yummy. ive also brewed the same stout but used black strap molasses insted was about 200g but felt it needed more so next brew will use the whole jar.

Out of interest what yeast will you be using ?
I love their Clerics Cure from the tuns pub next to the brewery... when in good nick (ie pulled though enough), one of the best cask ales i've ever had
Good luck with it
(never used treacle by the way, but looking to use demerera / musocovado in a future porter/stout )

I use various forms of mollases a lot. In my experience, 2-4 percent is delicious, 7 percent was a little too much.

I've used White Labs English Ale Yeast WLP002. I made the 50L brew yesterday. I added 370g (1/2 jar) of Meridian Blackstrap Molasses from Amazon and 30g grated root Ginger to the last 10 minutes of the boil. I tasted the wort at the end and could not taste any ginger and only a hint of the blackstrap. I added a further 20g of Ginger to the fermentation. I know you can't really tell what the fermented beer will taste like at this stage but it's a starting point. Maybe I should have asked Steve the brewer at the Three Tuns when I did the brewery tour. Maybe next time I get to Bishops Castle!
