Hops, Boil Soak and Residue

Can anyone advise?. My normal 45 litre AG brew is fine. I have a problem with hop taste, So I have mashed sparged and the boiler is full and ready for my hop additions. So 5 IBU hops at 60min 10 IBU at 30 mins 10 IBU at 15 mins and 4 IBU at 5 mins. The copper coil is in place and the protofloc was put in at 15 mins to flameout.I turn off the boiler wait 15 mins and cool. In the wort I have used 30 grams of leaf hops but 80 grams of hop pellets in a hop spider. I remove the hop spider when cool but let the hops and trub settle for another eight hours for the hops and trub to settle to perfect clarity before draining very slowly . Does this affect the flavour or bitterness of the beer having leaf hops so long in the wort?. Will the long cold soak of the hops cause any alarm or make the wort astringency in any way?. Also which way around do you add hops high alpha hops at the start of boil and low for the last 15 mins or visa versa?

I'm not sure why you want to leave the wort so long before running off. Usually you would let it stand for 20 - 30 minutes.

Hello Jim,
I brew every week so i transfer the yeast over three brews before I replace it. So I dont like trub in the fermenter to carry over.The wort is gin clear after standing 8 to 10 hours My usual yeast is Safale 04. Do you think I should filter the hops out and let the trub go into the fermenter and use a new yeast every brew. it is cheap . Could the long standing time with the hops cause astringent flavours, I have thought it sometimes tastes a little of tannins.

It's hard to say what the effect would be as it's not something I've ever done. Dry hops are left in beer for days or weeks and don't usually cause a problem, but cooling wort and boiled hops may be a different matter.

You say you're having a problem with hop flavour (at least that's what you seemed to say) so maybe that is the problem. I wouldn't worry about a little bit of extra trub in the fermenter to be honest - it's fairly benign stuff and even rumoured to be good for the yeast.

I'm lazy and tend to put my hops in very large hop bags. Consequently there's very little residue in the boiler as there's no hop bed to filter it out - it just goes into the fermenter. My brews still clear ok and taste fine. If there's a problem with trub in the fermenter I've yet to notice it. When I started doing this I used to transfer into a secondary after the main ferment in case it did cause problems. Now I don't bother - it seems fine!

I have 18 kg of malt left so I shall have two brews that I shall let the trub through and ferment. Happy Brewing :D

Hi Piscator, I ordered three 25kg of malt eight weeks ago. So a 45 litre brew every week .so I have two brews to the finish of the malt. Nine brews roughly 700 bottles to mature stored in the garage for the summer. If it's a hot one no trouble for me it's all in stock. I am retired so have plenty of time for brewing. So I will have a rest and empty a couple of bottles every night. Happy Brewing Roll on September brewing.

Now thats what I call forward planning - wish my stocks were as healthy as that! (wish I had a garage large enough)

What sort of fishing do you do?

Hi. Steve, I fished until a couple of years ago stopped due to health .Coarse fishing in lakes and rivers and twelve years season ticket holder at Draycote reservoir Still water fly fishing for trout. Margin fishing for Carp ( stalking ) and surface Carp fishing. I have quite a few home made bits and pieces of equipment I have devised to make brewing easier . I must get my Grandson to show me how to put pics online. Happy Brewing. :D

I have saved 1 lb of yeast from my last brew dropped into secondary on Wednesday. I am experimenting my yeast washing process for future brews so I will let the trub through and wash it to clean it up for next day brewing. Washing is doing well so far. :D

My beer has improved beyond belief this week it is brilliant. The hop flavour has changed beyond recognition . I cannot believe how good it is.So balanced. WHY.......I had my regular 16 week health & pacing checkup at university hospital and my consultant changed my one of my tablets. That tablet was causing my taste to change. So happy days now. Even food tastes good. Happy Brewing.
