I'm going to keg a Belgian blonde this weekend. On attenuation the abv comes out at 11%. And IBU is around 90 using endeavour in the boil and mosaic late. It doesn't taste at all bad in the fv but the alcohol comes through a little in the aftertaste so I've chucked 50 g of citra in to smooth it out.
How long should I let mature?

11% is a big beer, I would let it go for 6 months and then try it.

Sounds like a plan. I've never wanted to brew this strong then I went to Belgium!
