Hi All. I have an overabundance of strawberries from the allotment and want to make a strawberry lambic to tatse very much like a Belgian 'kriek' but with strawbs rather than cherries, obviously.
So my plan is to ferment out an 0.050 pale ale with T58 yeast, then innoculate with Brett and dump in a load of strawbs. Question is though, how much strawberries to add and how to add then?

Ive been planning on doing a Frulli clone. Base as a ligth wit beer then loads of strawberries in secondary. I think they actually use something crazy like 30% strawberry puree to beer.
Turns out strawberries are the worst to brew with, they seem to loose almost all flavour.
I think I worked out I was going to use a kilo per gallon. But again I missed the strawberry season here haha.
