How long in fermenter

Hi guys,

i got a brew on last saturday and it is sitting in my brewfridge at 20 degrees.

I was looking to bottle it next sunday but i have had to change my holidays meaning i am away for two weeks from next weds.

This leaves me two options:

1 - Bottle on Tuesday night after 10 days, or

2 - Leave until i come back on the 17th of July, meaning that it has been on the yeast for 26 days, albeit at a controlled temperature.

Whats your thoughts guys, bottle it or leave it?

2 options.

If the gravity is steady bottle it.

Or, because I'm rough, leave it for 3 weeks as a rule of thumb and bottle/keg it. The extra time will do no harm and will help it clear.

I've not been caught out yet with kits but I'll be paying much more attention when I do my first AG batch shortly.

i've left beers that long at room ambient with no obvious (to me) impact. and a lot longer when dropping the temperature. if it's done fermenting you could always drop to 10-14c while you're away to let it condition at cellar temps?

Leave it be. There won't be a problem leaving it that long on the yeast and it will give the yeast a chance to clean up the beer

That's what I would do. Drop it to about 12 c on Tuesday night and it will be fine.

I've lost beers that I've left at four weeks, 3 is the limit for me, usually I aim for 2 - 2.5.

Hi guys, that's me back and I'm looking to bottle this tonight or over the weekend.

Its been sitting at 10° for the last fortnight, should I rouse it to 18 or so for a couple of days prior to bottling or bottle as is?

I bottled it on Sunday night after 29 days in the fermenter.

The sample i took tasted fine.

Tried one of these tonight after two weeks in the bottle.

Not very nice, think that I have diacetyl in the brew.

Will keep for another couple of weeks and try again.

reading up on Sorachi Ace, which i used in this brew, has made me confident that the diacetyl taste is coming from the hops and not the fermentation as previously thought.

Does anyone have experience of these hops in relation to the diacetyl taste?
