After last years hashed attempt at my first AG Pilsner style lager, the weather is almost cool enough to try again.
My question is, do modern lager malts (I used bohemian but I'm open to suggestions) need a protein rest? ie: how well modified are they? I have a braumeister so it's easy for me to incorporate but I have been finding that adding unnecessary stages adversely affects the flavour. So if I don't need to do it I won't but from what I read it is important with lager malts. Opinions please!

Everyone will tell you that modern lager malts do need a protin rest and are fine infusion mashed. I don't doubt that is correct but I find a better flavour when I use a stepped mash, 30 m at 50c and then raising to 68c. I can't explain why. I don't have technology so I use no chilling afterwards. If you are getting a negative effect from stepping, just cut it out.

Cool thank you Raiderman. All opinions and suggestions are gratefully received and I will try them all. (Just I have no refrigeration for a 20l bin so I tend to get one shot a year at a lager, so it's slow learning!)

Hi - i made the lager from copperkettlehomebrew - it is a customers recipe and is availavle in a kit form to make 23l - it is a staight forward mash for 90 mins at 66 degrees and made a realy nice lager. Good luck and have fun. Chris

Hi Chris, my last - and very tasty - pilsner was 72% bohemian, 28% vienna. No problem with a standard mash, although I'd certainly try a stepped one if I had a BM. Good luck!

Cheers banjo! Reckon I'll add some Vienna this time. Last time I just stuck to Saaz hops. What did you use?

Saaz as well. Next time though I might try magnum for some of the bittering. Not quite to style maybe but I don't think I'd notice!

Always done a single infusion mash without issue. Keeping fermentation temp down and lagering is the tricky bit if you don't have a fridge. Patience also - don't expect to be drinking it until about 3 months!
