I did a pale brew with a rather complicated grain bill as it was using up odds and ends and then split it three ways and singled hop with moeteuka, Dr rudi and pacific jade.

The pacific jade was my favourite of the three brews, definitely noticed the pepery note but it wasn't a bad thing.

I have used Pacific Jade in a Hefeweizen. The peppery citrus nature of these hops worked quite well with clove notes from the Munich yeast and the bittering is quite soft, which suits the beer style. Should be good in a Lager, which would suit your Vienna malt.

The pepper doesn't dominate the hops other flavors

From memory, I think that these hops have quite a smooth bittering profile. Can't see 40-50 being a problem.

I've used PJ in my stouts, usually about 50 IBU for a 7% stout...but it could be anything really! Fine stout!
