Resolving a very bitter beer?
I brewed a 7.7% 'hop monster' in late September/Early October and it didn't really go to plan as it ended up with a very grassy, sharp aftertaste. I put that down to slight over utilisation of hop pellets and leaving the dry hops too long, so expected it to round off. 3 months on, the grassy flavor has gone but its still very bitter. It's probably drinkable but not great and I'm not really sure what to do now?
One thought I've had is to leave it in the polykeg and come back to it at Christmas to see how its got on. I don't really like that idea so thought I could maybe brew a low ibu beer to blend it with?
The recipe I was thinking of was another beer about 7.7%, good dose of crystal malt, no bittering hops whatsoever and only a spattering of aroma hops.. So intentionally unbalanced.
Is this a workable solution? Has anyone achieved this successfully in the past?

I had one that I over hopped (using a full packet of old hops instead of 40g), result was way to bitter. I left it for several months before it was drinkable.
So yes I would leave it to mature, maybe test every month to see if it is improving.

I agree with biker here, I made a 6%+ bitter once and it was bloody disgusting to begin with, it took a full 6 months to become even remotely drinkable. 12 months on it placed 3rd in a comp for the kit beer category!

Have you tried watering it down? It sounds wrong but you'd get a tasty 4-5% beer and twice as much. TBH though sounds more than just bitterness - if so that nasty sharp taste will prob stay even if you water it down. Give it a go though!

I wouldn't flog a dead horse personally...it's a bit mad to brew a new beer to blend in when you could just brew a new beer and learn from your mistakes.
I agree with watering it down though, might be a fine session ale at 4.5%.

Store and forget for a year, don't waste another brew or that might be 2 wasted.

Garage or shed and hope for a freezing spell - some of the polyphenols that make it bitter will drop out in cold storage.

These over-hop experiments are common and always come good 12 months later
