Raspberry wheat beer

I've got a raspberry wheat fermenting at the mo, it's the recipe from Greg Hughes book which I scaled down to 5l.

I want to now add the raspberries as it's been fermenting for a few days, but a bit unsure on the process.

I've got the raspberries, which I will put in another FV then want to syphon the beer on top then leave it to ferment out, but I'm not sure whether I need to leave the krausen behind and just rack the beer. I assume there is enough yeast in suspension to continue the fermentation.

Any tips at all?

Whenever I add fruit to a beer I wait until the initial fermenting is done. And if any krausen is left it stays behind.
I'm just here for the beer.

Thank fudge for that as I've already done it! The recipe called for raspberries after 2 days but I left it till tonight, so 6 days after brewing.

I siphoned all the beer using a syphon trap. So anything that came through was fair game and it left quite a bit of trub and krausen behind.

Looks a nice colour and smells nice, planning on bottling and leaving until we have a summer BBQ. Of course if the sample bottle tastes nice I'll make some more so I can drink this batch :)

You will probably find that the fructose will kick off the fermentation again, so check your gravity again once its finished. Might turn out a bit sharp but you can always add lactose to sweeten to your taste.

Over 12 hours since the raspberries have been added, and it looks the same as when I added them, as if nothing is happening.

I'm sure that's not the case and just going to leave it and see what happens. It's in a bigger vessel now in case it goes crazy with fermenting.

I did this recipe from the same book last summer. I split the wort into two FVs, and used frozen raspberries in one, frozen cherries in the other. About £12 worth of fruit (and that was on buy 2 get 3rd free I think at Sainsburys)

I left the fruit in for about two weeks, then bottled. Recipe says quick to drink but it was much better after six months - tastes nice and tart. I did over carb a few bottles though so take care with the priming sugar.

Cheers, I'm planning on leaving them for a summer BBQ, so a few months yet.

I batch prime so hopefully won't have an issue with over fizzy bottles.

I batch primed as well. You do know how much stirring you need to do to equally disperse sugar solution into 13 litres of cold liquid?

It's like a massive cup of builder's tea.
