Fruit beer - not sweet enough

Hi all,

Made a Cherry and Strawberry fruit beer the other week. However, the initial sample tasted like calpol... I think it was because I added Polish Fruit syrups in replace of real fruit. I am going to keg and tuck away. Shall I add another bottle of fruit sytup (approx 120 g of sugar in it), or leave?

In order to have residual sweetness in the beer you need to have some complex sugars that are hard to ferment such as what you get from crystal malt. Adding more simple sugars to the mix will not do it for you as they will simply ferment out.

Thanks. I was hoping for a quick fix, as I was sort of following a Greg Hughes recipe from his book.

Maybe time will be healer (doubt it haha)

You can add a sweetener which the yeast can't convert.

Any syrup you add will just add to the abv, not sweetness. Use Sucralose or (my preffered) Stevia.

Secondary 1 : None
DJ(1) : Nowt
DJ(2) : N'otin....
In the Keg : Nada
Conditioning : Nowt
In the bottle : Cinnamonator TC, Apple Boost Cider, Apple & Strawberry Cider
Planning : AG #5 - Galaxy Pale (re-brew) / #6 - Alco-Brau (Special Brew Clone) / #7 Something belgian...

Just an update. I decided to keg as it was, a lot of the strong syrup presence was gone, and I am just left with a punchy fruity beer. It is a lot better than I expected, not a lot of body to it, but that wasn't really what I was after. Will update in a months time.
