I've used clarityferm before with great success but this time I thought I would try gelatin.

I am thinking of adding the gelatin to the primary (9 days in and chilled to 3c).

Then split the batch into smaller demijohns to try different dry hops.

I'm hoping this will keep excess yeast out of secondary, I want to see if less yeast when dry hopping improves hop aroma. I hear adding gelatin strips out a bit of hop but thought might not have that effect if I dry hop later.

The question:
If I add gelatin now, wait 2 days, rack off onto dry hops, and then bottle in say 5 days will I have enough yeast to naturally carb?

I read that most people say bottling after using gelatin is ok when bottling after 2 days but what about a week later?

It'll be fine.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.
