Hi folks had my first ever go at a fruit wheat beer, I Brewed a basic wheat beer then added 5K of thawed out frozen mixed fruit into 25 litre after 5 days of fermentation, it's now finished after another 10 days and in ready too bottle, it just tastes too tart, not infected tart more fruit tart so I've started looking into back sweetening before bottling.
Research on it doesn't shed much light so I have been thinking about adding stevia or sweetex dissolved into boiling water added at bottling along with my usual priming sugar.
Is this a good idea ? If so how much artificial sweetener for 25 litres ?

I've no idea how much you'll need, but you could take a 100ml sample, and add a small measured amount of your sweetener, taste it, add more if necessary. When you reach whatever works for you, scale it up to your full batcb.
