I'm making my first Kolsch, and seen different comments about the order to do things so after some advice.
Kolsch is in the brew fridge now, the OG was 1.049, target FG is 1.009 and it's 1.014 after 2 weeks at 16c so keeping an eye on whether it continues to drop or might be done.
To clear the Kolsch I understand I need to lager it for a few weeks. I'll be bottling so will also need a couple of weeks at room temp to carbonate.
I was planning to raise the fridge temp to 18c for the last few days of fermentation then crash cool, but which way is best to go from there:
1. Bottle it, leave it room temp for 2 weeks then lager bottles in the fridge for a month+?
2. Lager it in the primary for a month or so, then bottle after? (What temp would you lager at like that?)
I don't want to rack it to a secondary and risk oxidising if I can help it.
Thoughts or advice appreciated.
