Hi all

I would appreciate some advice on what works well with el dorado hops in a pale ale or ipa. I want to create a fruity ale with a ibu of 20 to 25 and was wondering if any of you had a go to recipe you could give me to try. I am quite new to brewing so any advice will be greatly appreciated.
PS I have 225g el dorado pellets and
50g brambling Cross leaf

I haven’t tried these with El Dorado but I use Riwaka with Galaxy for a hoppy golden ale.
They are expensive (available from MM) but are low AA so you can keep the IBU down.
I use 100g Riwaka and Galaxy at 10 mins in my Riwaka Gold Ale for a volume into FV of 35 litres.
The malt bill is mainly Maris otter with some carapils, wheat and Cara red. Lovely golden hue.
A very punchy hop flavour of grapefruit and citrus, .
Happy to put up the full recipe if interested.

Why not single hop with el dorado?

Do you have a malt bill in mind?

At that IBU level you probably should keep the ABV to close to 4% and you will probably need something to give a bit more mouthfeel than you’d get from all pale malt.

You could try:

92% pale malt
4% wheat malt (or torrefied wheat) - should contribute to the body and help with head retention.
4% medium Crystal for a bit of colour and a touch of caramel flavour.

I’d suggest mashing around 66-67C for an hour and then hop additions at 60, 15, 5 and 0 mins through the boil plus consider some dry hops if you think it needs more hop character post fermentation (smell/taste and decide).

Not sure what yeast you have - or might get - I like WLP002 (wet yeast) for beers like this, but S-04 would be ok. Ferment at 20C

If you prefer a cleaner (perhaps more American) yeast character, use US-05.

Thanks for the advice dads ale and cobnut. The yeast I have is 05 and mangrove jacks w44 west coast, but could get something else no problem.

This is the recipe for the batch I did a couple of weeks ago:

34 litres into FV

Pale malt (Maris Otter) - 5 kg
Carapils - 500g
Carared - 500g
Wheat - 500g

Mash at 66 - 67 c for 90 mins

Boil 60 mins

Riwaka and Galaxy - 5g each at FWH
Riwaka and Galaxy 95g each for 5 mins

34 litre into Fv

Yeast US05

OG - 1046
FG - 1010
IBU - 34

https://beermaverick.com/hops/hop-comparison-tool/ This is a handy free tool, ( gotta Luv). Allows you to put 3 hops in to see how they can blend for you. Mosaic and Citra are just a great pair of Hops that as well as Galaxy would work well too. Dry hop with this or, and, whirlpool them too.

I really believe you educate your taste buds doing single hop brews.

This is my cascade ale. Simple and very nice.

Saf-04 ale with 100g cascade.
4500g Maris otter 500g what malt.
66c.
45min boil.
Hopping @ 15min with 30g & 30mins with 30g
Final 40g flame out @80c
(Shout up if you want the Full recipe)

In the first instance I would run it like this, as a direct substitute for the cascade.

Mates voted my 113th all grain brew as the best beer they've tasted. Probably over the top but they usually don't hold back if they don't like something!

It was to use up some end-of-bags so had 25g each of El Dorado, Galaxy and Simcoe - dry hop. Have also tried it with Mosaic and Galaxy and nearly as good.

Another vote for Crossmyloof for hops - great selection, price and deliver free usually in a couple of days.

Difficult to replicate the bittering hops (90 minute boil) for any of my brews as they're my own home grown. For this 'house' IPA it's 50g Cascade and 50g Northdown. Then 50g Styrian post boil at 55c for 15 minutes. Might sound a lot but I only get an apparently lower amount of lupulin (visually) up here in North Yorkshire and end up at a general addition through trial and error - this was on the 2020 harvest. It was the last of that so I'm already 'trialling' the 2021 crop - lower yield but better looking levels so am already making some adjustments although too early yet to judge the outcome.

Dry hop, as mentioned in my earlier post - into secondary at 8C for 3 days, removed and dropped to 2c for 5.
