Cheers WA, I have entered a couple of competitions over the years but I don't really brew to a true BJCP style all that often, as a result I have normally scored average marks on entries (nothing wrong with the beer but just not a true style to be marked against). The Oatmeal recipe posted earlier in this thread is a tried and tested recipe that I given quite a few years ago by a very accomplished brewer. The smoked one I actually got the place for, I will change out some of the smoked malts for different variety's to see if I can lift the overall complexity + change the water profile slightly but to score 41 out of 50 for a beer in a BJCP event I fear I might just ruin a perfectly good recipe but such is the nature of continuously trying to brew that perfect pint has anyone ever brewed one? I am still chasing.......

Rauchbier, smoke beer recipe preparation. Some of you might know I do love a good Rauchbier, my favourites are normally from the Schlenkerla range, which usually include beech or oak smoked malts, my preference is usually towards the beech side of things. However a few years back I started playing with different smoked woods, loads of them out there all adding their own unique flavours.
My thought process was a standard beer recipe might contain a number of malts to add to the overall complexity of the final beer, so why be boring and stick with just the commercially available smoked malts, why not smoke your own.
So the journey started, firstly could I smoke malt to rival the commercial examples = Tick, yes I think I can. Would the resulting beer be as good as commercial examples = Tick, yes it could.
What would happen if instead of standard beech or oak you introduced additional smoked flavours, should you smoke whole grain or mill, how long to smoke it for, how much should you use? Down the rabbit hole again for a couple of years, the biggest problem I have found that it takes ages to brew a good smoked beer, especially if smoking your own malt. First the smoke and then the mature of the grain takes several months. The brew a day of course but the lagering process another 4 or 5 months, so it can take 8 or 9 months from start to glass. I will normally stagger 4 or 5 smoked brews over the year at 2 or 3 week intervals.
I have what I consider a near perfect smoking wood recipe but with my fondness of rabbit holes thought I might add an additional 5th smoke element to the party.
Will probably see if I can smoke the grain this weekend ready for a possible campsite brew in the spring of next year ready to drink Sept /October 22.

Managed to get my score sheets for the original Canterbury Tales brew & the Smoked one.
So will have to tweak the recipe and the water profile for the Canterbury Tale's one, can do nothing about the hops as those were a one off.
For the smoked one will probably very slightly tweak the water profile + slightly alter the smoking woods.
Overall still happy with the results especially as one was brewed on a campsite

Next campsite brew is a go I wanted to get another brew on before the end of this year, recipe undecided as of the time of writing but might be the Oatmeal one again, will have to see what ingredients I have. No real gear modifications this time as the 2nd brew really went without a hitch, so if it isnt broke dont fix it.
Only going for a couple of nights so no baking or real cooking this time, trying to travel as light as possible, well as light as can be expected with all the brewing gear and a couple of willing assistants. Looking forward to brewing again. Weather is quite mild over the next few days at circ 14c with light winds and fingers crossed no rain.

Sleeping bags have a comfort rating of 0 to 6c with an absolute limit down to -15c so if anything might be slightly too warm at night. I don’t mind the cold if it's dry so hope the rain stays away. Nothing worst than being stuck in a tent when it’s too wet to go outside even worse trying to get clothing dry again. It’s going to be a more memorable End / New Years brew plus the 1st new year’s night out for over 10 years.

Extremely mild day and night. In a tee shirt most of the day had to put a jumper on this evening though. Slight accident earlier managed to slip arse first into a very large puddle. Trousers are still hang in a tree to dry.
