Hi all, I think I will go with 2 of Morrisons 5L water bottles to bulk condition my RIS for a few weeks prior to bottling, plus this will give me a chance to decide if I want to add oak chips to my RIS

Hi all, Eventually I decided to bottle my RIS today instead of messing with oak chips, ended up with 31 x 300ml Bud bottles. I might do another RIS at a later date and experiment with oak chips.

Hows this RIS doing DC? Must be time for a cheeky snifter by now? I'm thinking of doing an RIS, I have the yeast cake from bottling a 1050 ale due soon, thought it'd be man enough to take an RIS.

Hi micmacmoc, sampled a bottle of my RIS about 4 weeks back and its coming along good, it would give a shop bought bottle a run for its money no problem. I've made a couple of other strong beers since the RIS a Belgian Tripel 7.6%, a Porter at 7.2% and they are pretty good too. I would recommend making an RIS to anyone, I would suggest making around a 10L batch initially and try and leave it as long as possible before sampling. I ended up with around 30 odd 300ml bottles of RIS and after giving a few away and sampling a few since bottling 4th Nov 2012 I've got 20 bottles left which will hopefully remain untouched till 04/11/13 which will be a full years conditioning. Go for it mate and brew a RIS and let us know how it goes?

A BELATED HAPPY 2ND BIRTHDAY TO MY RUSSIAN IMPERIAL STOUT
Just thought I would post an update on my Russian Imperial Stout as it has now passed its 2nd Birthday it was 2 years old on the 4th November 2014 Ive managed to keep a few bottles (only a few mind) Looking to sample a bottle at the weekend and report back on how its turned out after 25 months in the bottle.

Hi Far, I added just under half a teaspoon of sugar to each bottle when bottling and the carbonation was as good as a normal strength brew in a 500ml bottle

Hey Far, did you do a brew day post for your RIS? If so I would be interested in reading it ! I think I still have 4 or 5 bottles left after 26 months !! It's not a beer you can just throw down your neck for fun ! And you need to keep at least a few to see how it matures after a few months, 6 months, 12 months, 18 months, 24 months it's worth keeping them to just see they how develop over time

6.00 MO, .300 choc malt, .200 Roast barley, .200 flaked oats, .200 black malt, .200 crystal, .150 flaked barley.
40g bramling cross 60 min, 40g bramling cross and 50 g challenger and 60g perle 15 mins
pitched onto slurry of nottingham yeast.
Now this should have given me an OG of around 1090, but due to unforeseen circumstances i had to cut the mash and sparge short, I only got 1070, so after one day in fermenter i boiled 900g DME and added . So all calculations are out of the window, got it down to FG 0f 1014, so maybe around 9% abv, but who's counting?

Hi all, after looking for something in my garage this afternoon, i cam across 3 bottles of this Russian Imperial stout which i thought i had made in 2014. Just cracked a bottle open & it still had enough fizz to give a slight head which only lasted 10 seconds then was gone. But even after 8 years in the bottle (just checked this original brew day & its from 2012) & not 2016 it tastes absolutely AMAZING . Its so strong & its got such a liquorice flavour too it. Its like sucking a stick of liquorice but in a good way. It has an amazing mouth feel & clings to the side of the glass like a fine whisky.
I am savouring every mouthful as i am supping it
