Also found this.

I knew I’d had a conversation about it. Didn’t realise it was 10 years ago ImageImage

In there is my tribute clone recipe and also an email from the brewer at St A (some one else contacted them) saying Munich is the closest replacement

Thanks. So UK Munich malt it is. I hope people take note I say "UK" and not continental Munich malt. I've seen folk saying the UK stuff ain't so good in their "lagers", "dunkels", etc. (they use different barleys and probably different malting techniques on t'other side of Channel); well this is for a Cornish ale clone and I'd expect the reverse to be true.

I think they use mainly (all?) Cornish Gold in their Tribute but a mix in Proper Job (Cornish Gold and a Cornish Maris Otter barley malt … and others?), the proportions of each in the mix I've no idea of.

The St Austell website has MO and CG as the malts first tribute.

A while back they tweeted the original recipe sheet for Daylight Robbery (the eclipse special which turned into Tribute), which I posted over on HBT, and someone has added some comments from Roger (RIP) - I like the detail that they weight their pounds in hops because their hop scales date from 1934 and that's what they measure in!

You're right. Same info on https://www.staustellbrewery.co.uk/beer ... proper-job.

But I got the original info off https://staustellbrewery.wordpress.com/our-ales/. So seems they are not very consistent with the details they share?

(EDIT: The line under "Proper Job" says "a blend of malts including our own Cornish Gold".)

Lol! I’ve never understood brewers having recipe ‘secrets’ . Either that or it’s the marketing department not having a sound brewing knowledge

I tasted Proper Job last week for the first time. Coors have a lot to answer for producing such crap beer.

What are you reading? St. Austell isn't a Coors minion.

Cooors? Pee Jay? Proper Job is a fantastic beer. I wouldn’t sell it in my shop were it not. We should remember Roger Ryman, excellent brewer and a sad loss. 2020 has been awful. Losing Roger was. He transformed St Austell Ales. Proper man. Friend and proper job as we say down here.

Are you confusing it with Sharps Doom Bar? That is a poor beer indeed. Proper Job is an excellent beer.

Maybe he is saying "if St Austell can produce a beer as good as Proper Job then why can't Coors? They have a lot to answer for about the crap they produce".

Loving this thread - I recon Munich's a good replacement for Cornish Gold, when I compare these ...

https://www.simpsonsmalt.co.uk/our-malts/cornish-gold/

https://www.simpsonsmalt.co.uk/our-malts/munich-malt/

Notes made on a brewery tour suggests they use Chinook, Fuggles, Willamette & Cascade for hops. I was told their yeast comes from Innis & Gunn.
