Mandarin Dream

Post by charliemartin » Wed Mar 27, 2019 1:43 pm

Yesterday was a brewday. Haven't posted a brewday for quite a while so thought it was time I did. Nice smooth brewday with no issues. Mashed for 90 minutes (@ 65C) as I had a few things to do, but normally I mash for 60 minutes.
First time using Mandarina Bavaria hops so hoping they have a nice orangey flavour. Added dried bitter orange peel to help them out.
Recipe below. Hit slightly higher efficiency than estimated giving me one point over on OG. Probably down to the Minch Malt which does give very good efficiency in my experience. The Crisp's malt was the last of a sack hence the use of two pale malts.
Yeast was a hybrid of Imperial Tartan and Gervin. Last brew I was waiting for the Imperial yeast to arrive and threw in some Gervin just to stop any wild yeast taking hold before I pitched the yeast. The Imperial yeast arrived the following day and I pitched it on top of the Gervin. The yeast for this brew was taken from the trub of the previous brew and pitched into a 1 litre starter the day before.

Some more pics. Forgot there was a limit on how many you can post so these should have been first.

Thanks for posting. It'll be interesting to hear how the combination of yeast affects the final brew.

Cheers Jim,
The previous brew was fermented with the original mix of Imperial Tartan and Gervin and I am currently working my way through it. The Imperial Tartan yeast was selected because I assumed it was a version of the McEwan's strain such as WLP028 or WY1728 which I have used in the past and found to be very good. It allows the malt and the hops to shine.
First impressions of it are good with plenty of malt flavour coming through and a decent level of hop bitterness as well.
Be interesting to see if it changes characteristics with this second generation.

Just added 30g Mandarina Bavaria dry hop with 50g of dried bitter orange peel.
Took a gravity reading and it's down to 1.007 against a predicted FG of 1.008. Tastes good with a definite hint of orange. Looking forward to this one being ready to drink in a few weeks.

Bottled this yesterday. Nice orangey aroma. Gravity still at 1.007 so definitely finished.

Turned out great. Lovely orangey flavour. Only negative is that the sediment has gone very loose recently. Needs to be really chilled down and poured very carefully. Not entirely sure it's yeast though. Doesn't seem to have an infection, just this very loose sediment which floats up in the bottle.

I forget if we were talking about it before but i make basically the same beer at work albeit with a much bigger dry hop. This year I’m trying orange extract in place of loose dried peel. It’s in the FV dry hopping now. I like the new german hops, they’re not as punchy as the US/NZ but they occupy a nice space where they can be used in basically any beer style.

What kind of orange extract is it? I tried an orange extract in a stout, but because it was oily it killed the head.

Just the Neilsen Massey stuff from sainsburys - our usual pro supplier is indefinitely out of stock it seems.

What sort of volume/25litre batch would you suggest trying with Mandarina hops too? A local brewery has a pale ale with apricot extract which I hate, tastes synthetic, but is perversely their best seller.

That looks very similar to what I used. Oil of orange being the main ingredient. Be interesting to see what effect it has on the head of your beer. Unless of course you don't like a head on your beer in which case you should be fine.

Interesting! Touch wood the beer engines in the pub should handle that...

Kf: i use 5g/L dry hop and that’s alright for a full flavoured but not over the top beer, but that’s mainly because it’s a 5kg pack in 1000L. Luckily it’s probably about what I’d use anyway!

Have been wanting to do a marmalade/orange brew for a while - looking at your Sunshine Marmalade Rob as well as the Mandarin Dream Charlie. Intrigued by the reference to the Nielson Massey 'PURE' Orange extract, had a look on their website and it states its made up of 90% alcohol, oil of orange and water. You have to ask how that equates to 'pure' orange.

See Sainsbury's also do a Valencian extract with what must be a similar (9%) amount of actual oil. Problem there though is the remainig 91% is stated as rapeseed oil.
