Been a while since I’ve done an old school brew day post.
Had an urge to make a best bitter today so got on with the following.

All went pretty smooth. I love cascade and BX together. One of my favourite hop pairings. Fermented with MJ Empire ale at about 20oC
Not many photos but here they are.
Checked the alkalinity of my water last night. Having moved house recently from a very soft water area to a hard as nails area, I’ve been meaning to get to grips with the new water additions. I think now I’ve cracked it.
Mash pH was acceptable, if a little on the higher end of the scale.
Makeshift wind break for the gas burner. Looking forward to getting a proper brew shed built at the new house.
Little bit under pre boil gravity but I over sparked by about 1.5L. Adjusted it was spot on.
Delicious combo.

Nice and clear. Looks lighter in the photo than in real life.
25L into the FV so 1L over and a bit low on gravity. Still dialing in the new boiler but getting closer every brew.
Plan is to have this served through a beer engine. Really looking forward to this one.

Cheers pal! Turned out a great pint. A nice easy drinker with a slight malt sweetness counterbalanced with just enough bitterness. Very English despite the cascade.WalesAles wrote:Leeds,

The empire ale yeast didn’t floc as much as I thought it would. Bottles have dropped clear but the keg is still cloudy! Getting a fermentation fridge next week so will be able to crash cool before kegging from now on.
