Can someone tell me why we cool the wart down to pitch temp with a chiller ?

I dont have one, and so fill my FV with hat wart, fit the top and airlock let stand till cool and them pitch yeast. So far its worked.

So why do they say cool it down fast ?

It minimises formation of diacetyl, precipitates more protiens, and reduces risk of infection before you innoculate with yeast.
