I am hoping to try my 1st extract brew this weekend. The ingredients i have in mind are as follows:
Amber malt extract (2 unhopped Cans)
Crystal malt
Malted wheat
Goldings
Fuggles.
Some type of yeast.
Has anyone got any suggestions on quantities of the grain i would need, and if I simmer them together in bag.
Also, how much of either hop varieties to weigh out.
I assume Goldings for bitterness and Fuggles for aroma?
Any liquid malt extract or go for DME?
I would appreciate some help on this.

What style of beer are you trying to produce? For example, are you after an IPA or an English bitter?

I like pale golden beers as well as traditional bitter styles. I just wondered if those ingredients would make a decent beer. Butty Bach (Wye Valley Brewery) is a favourite hence those ingredients.

Seems fair enough. The ingredients you mention will certainly produce a perfectly decent pint. Can you confirm how much of each you have? As for yeast, if you're fairly new to this I'd stick with something like Safale S-04. Easy to use, readily available, reliable, and effective.

Just a couple of observations about your ingredients:
Rather than use Amber malt extract I would use a pale malt extract instead. Make up the colour with speciality grains like crystal. This will make the recipe more reproducible and controllable. Who knows what Amber means? Pale malt extract is extract of pale malt and little (if anything) else.
Malted wheat is no good for steeping, it needs to be mashed. Save that for when you go AG.

I would prefer the Fuggles bittering, Goldings flavor/aroma combination myself but it's up to you since it's your brew.

DON'T simmer the grains, steep them @~70C ish for half an hour or so.
Regards the quantities of hops it's hard to tell without knowing their bitterness rating. It also depends how bitter you want it. Since it's you first time the best way is to search out a proven extract recipe on this forum (there are lots) and use that.

Thanks guys.
Spoke to chairman of Wye Valley Brewery last night at my local (He hosts pub quiz!) and mentioned I wanted to rip off his famous beer - he also said pale malt extract would be best. As he isnt hands on anymore and couldnt remember which hops were for bittering and which aroma (he thought probably fuggles for bittering). Lovely guy even said he could arrange for me to have some Butty Bach wort mixture straight from brewery!!! Could have been the drink talking though. As for the wheat - Im not ready for mashing yet, but may try the liquid wheat and see what happens.
100g Fuggles 60 mins????
50g Goldings 15mins????

As he isnt hands on anymore and couldnt remember which hops were for bittering and which aroma (he thought probably fuggles for bittering). That's rather a lot. I'd go for 60g Fuggles at boil and 35g Goldings at 15 mins and if you like it hoppy maybe another 10g Goldings at 0 minutes steeped for 30 minutes.steve o wrote:Thanks guys.
