VERY clear beer and priming

Post by pauljmuk » Thu Aug 06, 2009 12:58 pm

Hello all

I've just put together an extract brew from the Camra book - based on the TT Landlord beer, but with some extra black malt at the start to darken it, and i've used northern brewer and fuggles hops as opposed to Goldings and Styrian Goldings. - Fermentables all the same though, using a mix of DME and LME totalling about 3kg altogether.

Brewed with Safale S04.

Anyway - OG was 1042 (as per recipe), and started fermenting very nicely. I usually leave my brews AT LEAST 7 days, and usually 10 before bottling, and have never had an isse - all have carbonated, all have cleared nicely.

This one, on day 6, had fermented down to 1012, and was clearly doing very little - actually looked clear in the FV.

Bottled it on day 7 into glass, primed with brew sugar at about 2.5g per pint bottle, and I cannot get over how crystal clear it is. Has been sat warm conditioning now for 2 days, and tiny amount of sediment has gathered on the bases, but otherwise crystal clear.

QUESTION - I'm now worried that there is little left in suspension for the priming sugar to work on and carbonate. Have never had a beer go this clear quite so quickly (ie before bottling!) and am a little worried. It's a cracking recipe, and will be a shame to ditch 40 pints.

hmmm fingers crossed - was only bottled at 6 days. Bit of sediment in the bottles (but only a bit) - presumably that's a good sign? (ie, thre must be SOMETHING in the bottles)

i'll be patient, leave it a full week in the warm then into storage. May crack one open in a week to see. Never bottled any brew so clear before that's all.

Just about a week now in warm storage, and cracked one open. Flat (ish), bit of fizz, not much - not much sediment either.
