When a recipe asks for hops to be added at the end of the boil or when you take it off the heat, how long do you 'steep' them for?
Jim's instructions say 30 mins (If I've got that right?) but isn't it important to chill it asap and if I steep for 30 mins shall I leave the lid on to keep away non sterilised 'things' from dropping in or will that just keep in all those chemicals we need to get rid off?

Probably safest to pop the lid on. All of the undesirable volatiles will have been driven off during the boil.

Aha, just what I was thinking 
So, a 30 minute steep once off the boil is a standard for 'end of boil' hops? I think last time I added them the last two minutes and took them out about 10 mins after as I was cooling it. My first batch had spent 17 days at a constant 20c and now is at a constant 10c so I my try one soon.
