Torrified wheat in extract brews

Post by booktownman » Sun Apr 11, 2010 10:20 am

Can anyone advise me how I go about using torrified wheat in an extract brew to improve head retention? Can I just lob it in my boil? Or maybe steep with the speciality grains? How much should I use for a 5gallon brew?

Thanks in advance,

You need to do a mini mash to get any good out of torrified wheat, not only that I think you'll need to mash it with a base malt to supply enzymatic action needed for the conversion.
You can't just boil it and you can't just steep it, both methods will just add starch to the brew.

You could use wheat spraymalt instead. Use 75% of the amount of torrified wheat i.e., if the recipe says 100 grammes of torrified wheat use 75 grammes of wheat spraymalt.
Best wishes
