No problems out of the ordinary (I did burn the bottom of my stock pot but that was most probably due to lack of stirring of the LME, rather than it being wheat extract rather than Barley).

I used a 1500ml starter, which got the main batch going after about 3 hours, pretty quick. I wouldn't use an airlock, just leave a decent opening in the fermenting bucket lid and clean the mess up the next day. It's a lively yeast. :D

When it's settled down I'll close the lid and stick an airlock in.

I'll let you know how it turns out. I guess 2 weeks to ferment out and cleanup, and a couple of weeks in bottles gassing up.

You must have tried it when you bottled it  or do you have super human self discipline...

certainly did - it tasted like wheat beer! i really am no expert on the stuff to be honest but it definitely tasted as i expected, no harshness or anything else unpleasant that i could pick up.

i primed with more sugar than i usually do as i read wheat should be fizzy, i'll try and give a better critique in a week or so.

so far so good.

well this is now 4 weeks old, 2 weeks in the fermenter and 2 weeks in bottles. it's excellent. as i said i am no expert but it has the banana, bumblegum flavour i've read it's meant to have and i swear i can taste a bit of orange, so maybe the orange peel i added did the trick or maybe it's the yeast. tastes a hell of a lot better than the stuff i've had in the paste. very pleaed with it so i would recommend the recipe.

the liquid yeast i had was very fresh, that maybe one of the reasons it's good. all in all, pretty good for an extract brew.
