Surely you only need a diastatic LME for use with specialist grains.

To be honest the next time I have to order some it will be Brupaks, they seem to set a higher standard than most or it certainly appears that way.
Well I guess it's my traditionlist background. I was bought up with EDME which had some advantages with extract recipes especially those with other grains, as you have pointed out. I tended to find EDME offered pretty much guaranteed avoidance of some potential hazing problems and on the whole seemed to brew out with a better taste. I have also been a perennial experimenter with fruits and other beer adjuncts and the diastatic properties of the malt seemed to help with preventing fruit hazes as well. :D

Edme DMS Malt Extract (Pale)

The original Diastatic Malt Syrup, but now made by Muntons. Its diastatic properties can be used either to convert cereal adjuncts in malt extract beers or, in real emergencies, to rescue a set mash. £9.49 /1.5kg.
