wort temp questions

I'm just about to do my first extract brew :)

i'm using some crushed crystal (inspired by Daab's great dave line fullers thread)

What happens if the wort goes over/under 66-70 deg c when i'm steeping the grains? I have a big stock pot on the stove at the moment and keep checking the temp before i go ahead with it on friday to see if i can hold the temp.

I presume under temp i just wont get the wort i desire.
Will over temp create bad flavours or just mess up the grains?

Thanks Daab. With the test i managed to keep within the range really well.
