hot break and cold break

Sorry if this is a bit daft but would like edificating.
I understand that the hot and cold break during boiling/cooling are unwanted proteens coming out.
Where does these come from? is it the malt or hops or both?

The other question on this is;
Is it important that these are left behind in the boiler, or will they just settle to the bottom of the FV if inadvertently transfered? If left in FV is there a danger they will disolve again?

I only ask as I did a meed ale last night and put in the DJ hot and cooled in that and during that some floaty stuff (technical term) seemed to drop out to the bottom and I've left it in there is that bad?

I'm also guessing some finnings will help clear it if I have messed up.

1) Malt.
2) Yes - protein can haze your beer.
3) Whilst mead is not my strong point. Solids are on the whole a bad thing.
