Increasing bitterness

Hello,

did the Fullers ESB clone, and pretty good. However I now want to adapt it a bit to suit my taste.

So how do I increase the bitterness of the beer, is the most effective method to increase bitterness
increasing hops or staggering the quantity of hops? ie 1/4 of hops at start 1/4 at 10 mins, 1/4 at 20 mins
etc.
