Just a qustion about fermenting temperature.
My IPA is bubling away quite heavily on the second day, the worth temp is about 18-20c. This is my 6th brew and I have never seen so much activity in my brew before. My question is now, when the bubling is over do I still have to keep the temp at this level or does it matter if the temp drop to about 10c.
The reason I ask is because I will have to go away for about 10 days with my job and the brew will not be ready to bottle before I go away.
