CHRISTMAS
I have everything ready for a Brupaks old ale brew which i intend to bottle but want it to be at its optimum best for Christmas, so basically when is the ideal time to start the brew off,cheers for your responses

I'm not talking from great experience but from what I've read I'd do it now as beer only gets better the longer it ages in the bottle; my kits did and I had them for months and months

As a general rule, you should condition 1 week per every 10 point of OG i.e 1.020 - 2 weeks, 1.030 - 3 weeks, 1.040 - 4 weeks etc.
So on an old ale of 1.060 to 1.080, then 6 to 8 weeks would be perfect. On the imperial stouts of 1.120, they recon 3 years is the otimum conditioning time, so get going.

Just to be sure, I'd make one now and another in a couple of weeks once your fermenting vessel is empty again. You never know how the season will turn out....

Aha, great idea. Would be a shame to be dry at Christmas, especially if you make a cracking pint
