Diastatic malt extract

Can anyone explain how this works.I understand that i can partial mash with this and get sugars from grain that i would just normally steep.
I bought a tin today and fancy trying something different?

Wheeler has a recipe for Hook Norton Best Bitter using Diastatic extract if you would like me to post it :?:

No problem :D
For 23 Litres OG 1.036 3.7% a.b.v

2750g Diastatic malt syrup
240g Flaked maize
60g Chocolate malt
33g Fuggles start of boil
30g Challenger start of boil
10g Goldings last 15 minutes of boil

Dissolve malt extract in 4 gallons dechlorinated water at 40 C stir in grains and raise to 65 C. Hold at 65 C for 30 minutes.
Remove grains. (I think I would put them in a grain bag :wink: )
Rinse (sparge) grains with water @ 75 C
Boil with hops as per recipe.
And so on :)

I only have 1.6kg of diastatic malt but i was planning on using another 1.6kg tin of John Bull light extract which i was going to add after the mash.How much sparge water should i use?i guess as there isnt a lot of grain to start with it wont take much sparging?

Actually, thinking it through, I wouldn't bother with the sparge as that flaked maize will be mush :?
Just put the maize and chocolate in a grain bag and remove it before the boil :D

That's what I used to do when partial mashing. You just need to free the extract.
