How long does stuff keep?

Not sure if this is quite the right section but there isn't a "General Questions"

So, anyone know How long does stuff keep? once opened
1 A tin of LME with a lid in the fridge I suppose
2 A pkt of vacuum packed hops. I suppose it will just gradually lose its VIM but over what time scale
3 A pkt of dried yeast. I would imagine this is the important one.
4 The liquor from some steeped grains - crystal malt? can you make a batch and keep it in the fridge? or even freeze it?
5 A batch of Double Diamond thoroughly aerated before kegging (joke)

Assume the sell by date is a good way off and I would have thought everything could be kept in the fridge.

Cheers

No 1 If there is mould on it dont use
No 2 Wrap them up tightly and place them in the freezer(I have kept open packs of hops in the freezer for months and they have been fine afterwards!
No 3 Dried yeast will be ok upto the best before date and not a day later   .I have never used an out of date packet of yeast as the ones I buy have at least a year left but are used way before then!
No 4 No idea!!!!Steeping is so easy to do before boiling.
No 5 No need to aerate the DD before kegging as its bad already

As long as the sell by date I think, as long as it's re-sealed and preferably fridged. Longer than LME anyway.
