Coconut wheat beer

Just added the coconut to a wheat beer that I started 12 days ago: 2.5 gallons with 3 pounds of liquid wheat extract and .5 pound liquid pale ale extract. It went from 1.056 to 1.016 in 10 days.
This will be the first time that I've used fresh coconut.

Just bottled this and the coconut is in perfect balance with the wheat.
