Ferment it warm to get the best from the saison yeast.

Re: new brew
thank you, what temp , 18 c
Re: new brew
I'd aim for mid to low twenties, so 22 - 24°C, but don't stress, as long as it's below 30°C you'll be fine. That yeast is fine up to 35°C or there about, I think.

Re: new brew
Depends how much you're making and how strong you want it to be!
With the quantities of malt and sugar you're using you'll get 23 litres of wort at about 1.036 original gravity. It'll ferment out completely and give you a beer of about 4.6% alcohol, according to Graham Wheeler's beer engine.

Plug your greedy ants into a recipe generator and see what it says. I use this one - https://www.brewersfriend.com/; but have previously used Wheeler's Beer Engine, that's linked too from around here somewhere. Wither you need more demerara or not, depends on what you're trying to achieve flavour wise from that particular sugar.

Re: new brew
Probably not worth bothering. You're going to get a beer of about 4.6% anyway. More sugar will increase the alcohol, but make the beer taste thin.
