Silly question (perhaps) about temp readings?

Ok my new digi thermometer came today, I have enough grain and hops for 3 brews. Just need a day off and then I'm away 8).

I have a question about mash temperature. when I tested the boiler I took readings with my brewers thermometer and I got differing readings depending on where I placed it in the water. How will I know what the true temp is of the water when I add the grains? Where is it best to place the probe?

It will never all be the same temperature. I give it a good stir and read the centre which will be the largest part of the mash and where the temperature is going to remain most constant. Then lots of insulation and relax.

It's not really that exact of a science, stir well, take temps and then mash in when you're happy.
