Stirring up trouble?

Just set up my Cooper's and noted, for the first time, that the instructions that came with my original brew suggested stirring the mix for"up to three days".

I thought, once set up, the brew was to be left alone until fermentation stopped (or got stuck).

Should I be stirring for the first couple of days? :shock:

Makes me happier to leave it until finished (unless it sticks) - thank you for the advice!

Can I trouble you further? Made the kit with 500g light spraymalt and 750g brewers sugar (glucose). OG was 1055 (as far as I can see - must get an electronic meter) and sites I surf suggest FG should reach about 1010. Doe this sound about right (just so I have something to aim for!).
