Hi guys, I am returning to homebrewing after a break of 10 years or more. I always brewed with Muntons gold kits back then, usually with great results.
Having read the posts on the forums recently, I'm not so sure that Muntons kits are still so good, but I have two premium gold kits (Midas touch /Smugglers ale) to brew .
Regarding the issues of stuck fermentation, I plan to use an alternative yeast yeast ( I have a safale s04 and a Gervin english ale yeast available)
Which of these two yeasts do you advise for each of these kits?
I also have ordered some beer enzyme (in case they do stick) should I pitch this with the yeast at the start of brewing or do I wait until the brew gets stuck and then add it? (if it actually does)
Any suggestions for an old brewer come back in from the cold would be greatly appreciated
Aargh, just bought a Muntons kit !!!
I did both of those kits last year and they both turned out great in the end, but there were sticking issues and I gave them long conditioning periods.
Both the yeasts you mention are great replacements. Making up a sizeable starter and considering adding a little yeast-vit could also help.
There are a zillion threads on the subject though as you've discovered, I found the forum a great help. They'll do fine

I am currently conditioning a Midas Touch kit in the safety of my shed.
Like you I used safale 04 ,re-hydrated it as per instructions on tips page, and had absolutely no problems with fermentation, havent actually tasted yet , so I may be a bit premature with my optimism, but good luck and hope you get good results.

Thsnks for that guys. I think i'll try the gervin yeast this weekend for smugglers and safale for midas. I have ordered some yeast vit from hop and grape to add in so fingers crossed.
I'm also gonna try this new star san stuff to sanitize with (read that the foam is useable by the yeast as a nutrient or summat?)
