Well, as this is not my first brew (from which I took readings approximately every seven minutes) I would wait a week before I start taking readings.

Then you want 2 or 3 days with the same reading, then leave for a couple more days, then continue...

Typically (at Daabs advice) I am fermenting for 10-14 days, usually the yeast is all done by day 7, but I leave it be to let it clean up and to settle a bit.

hi it has been over 4 days since pitching a yeast that worked and I took a reading today and it has dropped from 10:40 to 10:14 ( as best as I can tell.) kit says once below the 10:14 so it is looking good after all the mishaps with the yeast.

So timeto leave it another 48 hours and take a second reading thought I would update on the progress of this Disaterous batch.

Is this to improve the flavour or clarity, or both?

is there a way to tell if the beer is infected apart from tasting it and praying you dont become ill.

There is dead yeast floating on the top of the brew I expect this as I had to use 3 batches of yeast Going to take another reading today and then bottle it could have me reading the Hydromiter wrong.

ok took another reading and I get between 10.10 & 10.12 when I started to bottle it looked more like 10.12 so it is probably my eyes lol.

Managed to bottle 22 Litres of the beer today.

I used brewing Sugar for 2nd fermentation and was rather impressed that it started fizzing straight away I left abotu an inch of air at the top of the bottles squzzed it out and sealed them with there Caps.

So now to play how long can I wait before I try one.
