if you gave it some air before the fermentation kicked off i wouldnt worry about it - its only really after the fermantation is done that adding air to the system can cause funny tastes etc. Sounds to me like it will be fine :)

Never! Consider this one, simple rule of thumb: Beer takes a month to make.
. Ipso facto; What ever it is in the meantime? It isn't really 'Beer', as in something to be considering the objective result.

Just accept that what ye in the process of producing there is going through constant changes. It's Developing.

My way is to simply get the job done and try not to worry about what it looks, smells or tastes like, until it's 'ready'. IF, in a few weeks time, it tastes like battery acid? Fair do's. Drainward it shall go. Ye've lost a few quid and a few weeks ~ and, hopefully, learned something worth that cost. If it turns out a belter? Just consider how ye once nearly slung it, before it had had a chance to show its true colours.

In short; Never sling a brew till someone taps on ye window and asks for Cod 'n Chips! ~ Or it makes You think of Cod and Chips ..... But Only once it's had Time to taste half right. Just ignore all that funky stuff in the middle. Panicking early is So easy
