Pitching more yeast

Post by mickhew » Sun Feb 28, 2010 5:28 pm

Hello.
I've done a Brewferm kit, as per instructions. After 8 days, gravity was 1020, the instructions say it should go down to 1010. So I stirred the yeast cake, and left for 2 more days. Gravity still 1020. So, I pitched some Safale S04, 2 days later, no signs of activity, so I bottled it, some PET, some glass bottles. The PET bottles are rock hard, now. I am a little worried. Question..
By adding the Safale, and priming sugar, could this start another primary fermentation, in the bottles ? I added 1 teaspoon sugar per pint. I'm worried fresh yeast, and priming sugar could make bottle bombs.
Cheers.

If you're worried, slightly crack open one of the PET bottles to release some of the carbon dioxide, then re-seal. If you get a gushing fountain of foam then you've got excessive fermentation and your glass bottles might explode. If they are swing top, you can open quickly and re-seal. If you use crown tops, you'll have to fit new ones. You could also store them somewhere cold, to stop further fermentation. Cold beer will also absorb more gas (but if you bring them into the warm before opening, the beer will release some of that gas into the neck of the bottle and give you another fountain).
