Over the past week or two Ive been reading up about brewing lager (on various web sites) and am a bit confused about diactyl rest. Originally, I had intended to wait until my lager was 3/4 of the way to its expected FG but have seen a number of conflicting statements about this. Some recommend moving to diactyl rest 1/2 way through fermentation, some say 3/4and some say wait for the fermenting head to fall back into the brew....
Im always a bit skeptical about information written by 'experts' on the internet and thought I'd ask a group of people who I know, know (if that makes sense). Whats the general consensus?

when to move to diactyl rest?

Dave, in a previous thread we were both contributing too: viewtopic.php?f=4&t=30952#p333323
So, when the ferment has 'all but died down' I guess. I left mine a bit late and increased the temp a bit higher, but never mind - it still tasted more like lager than anything I've done before. Next time it will be even better (he says)!
