Stuck fermentation

Post by matti » Mon Feb 12, 2007 7:54 pm

Hi all. I started a Woodfordes Nelsons Revenge kit on saturday (2 days ago). I was away on saturday night and came back on sunday night and there was no airlock activity whatsoever. I got a packet of yeast from another Woodfordes kit last night and added that along with a sachet of dry beer enzyme to try and get things going but theres still nothing happening. There is a layer of foam on the top but I think its just from me stirring loads of air into it when I started it.

Any ideas.
Cheers,
Matt

Fermentation and CO2

Post by Griff » Mon Feb 12, 2007 10:50 pm

I've just had a similar experience to matti.

Made up a nut brown ale kit with some extra spray malt. Had OG of 1048. Used an 11.5g sachet of safeale yeast rehydrated in some boiled cooled water and left at 19 oC to ferment.

Had no visible activity whatsoever the next day or the day after ! As the lid was sealed with an airlock decided the brew would be OK from bacteria so tried to 'rescue' it by sprinkling another sachet but dry this time.

Anyhow I had all but written this brew off and today when i racked it into secondary took SG and had a reading of 1012 and there was a huge yeast cake in the bottom of the primary.

Looks like I could be lucky, but whats going on ? I read this and another Forum that you guys help with an it appears that this is not uncommon. But how are we producing alchohol without 'apparently' producing CO2 as a by product ?

Cheers, Griff

Just wanted to add that I'm fairly new to homebrew but have been winemaking on and off for years now.

My previous attempts, Brupaks Fixby Gold, Black Moor Stout and a pilsner lager all had a decent Krausen with loads of CO2 bubbling off. And they all exceeded my expectations. (I remember homebrew as a kid, it was awful). :?

I want to get this right because I'm itching to go all grain :D

My Woodfordes wherry was a slow one too. Don't panic though.

I fitted an airlock to my ferm bin and honestly the amount of time it took the wherry to fill the void and show airlock activity was a LONG time.

Don't give up. Measure the gravity and check it a couple of days later.
