Damn! I checked out the recipes for IPA & found the one that says '500gm light DME + 300gm Dextrose', made it up & got an OG of 1044! Mass panick, back on the net & found a link here to 'Authentic IPA recipe' wot says '1Kg LDME'! Quickly (very) made up the rest of the DME in a sanitized jug & poured it thru the bubbler hole - OG up to 1058. [-o< Sugar (dextrose) pushed up to abou 480gms as well. [-o< [-o< I just hope the whole thing does'nt go pear shaped because of contamination. #-o Wot a wally! Really been looking forward to this brew as I have heard so much about it.

2nd Day fermenting. So far so good. Fermenting well @ 26'C. Still smells good. :shock:

Hi, what kit was this with? Bit confused by your post...
Also 26'c seems quite high

The first recipe I found was the one I used, 500gm light dme & 300gm dextrose which gave rather a low OG. I then did another very quick search & found a link on Jim's to an 'Authentic IPA' recipe on Coopers site. This said to use 1Kg rather than 5oogm of Light DME. Just to be on the safe side I dumped a bit more sugar in - about another 100gms or so. I was panicking because the yeast was already in & I was worried about secondary infection. It is a Coopers kit.

Day 4 - fermentation calming down to next to nothing. SG 1012. Things are looking much better! smells OK & sample taste not too bad.

It's normally very hard to infect your brew, especially if it's your first one on new equipment, with sanitation procedures followed. To infect your brew, You have to brew in a place that's positively crawling with bugs, or be lax with the sanitation.

The worst thing you could possibly have done is confuse the yeast with the extra dumping of fermentable sugars. You've got it up at 26 degrees - a little high - which should throw off some yummy esters and some fusels. It'll taste a bit fruity and alcoholic. Mind you, I think Cooper's yeast is fairly happy at high temperatures.

Hi Phillip,
Yup the temp is high. Unfortunately we are going through a rather warm spell at the moment - about 38'c outside at the moment. As you say, Coopers seem fairly happy with the higher temps. I have just racked into secondary with 20gms of Cascade. The FG was 1008. Not a very good colour though but hopefully that will come right after a few days. Smelt OK & did'nt taste too bad. No off smells that I could notice. I will NOT taste before I have bottled! :^o :wink:
