Should I remove yeast scum during ferment?

Hi folks

I'm new here and currently into my 3rd kit brew. I've noticed on all 3 occasions that I get a lot of 'scum'/yeast deposit on the underside of the lid of my fermenting bin and also on the edges at the top of the brew. Should I remove this in case it affects the flavour? I've been wiping it off with kitchen paper but wonder if that could introduce bacteria - any pointers?

Nah, don't bother. It's called trub and is harmless. It sticks fast to the fermenter so won't end up in your beer.

Yeah leave it alone. You are right to worry about introducing infection if you keep interfering with the brew.

Thanks chaps. I need to learn to leave things alone! It's too tempting to keep cracking the lid and having a poke!

My first two brews were Coopers Mexican Cerveza and turned out better than I expected. Current one is a Muntons Yorkshire Bitter with 500g Light spray malt, 250 Medium spray malt, 250g Dextrose with added hops (fuggles in tea form and goldings, dry-hopped). I have high hopes for it and will be bottling in a few days time.

I see you're tinkering with the kits. You're an all-grain brewer in the making. :D
